Developers are not only building New York-style luxury condos in Miami—they’re also importing New York-renowned chefs to open private restaurants inside the towers.
The latest is Michelin-starred chef Shawn Hergt, bringing his first private restaurant and speakeasy concept to South Florida perigonAn ultra-luxury oceanfront condo tower designed by OMA in Miami Beach.
Nota Herget will be the first Mediterranean concept at Pérignon.
He’s also opening FiftyThree, a speakeasy cocktail lounge with whiskey-themed cocktails. Hergt, who operates a private eatery inside 432 Park Avenue — as well as Zuni, Vestry and SHO Shawn Hergt — has specially curated the menu for residents in the 73-unit building, where prices start at $4.15 million. Starts and amenities include wine. room and garden, a breakfast lounge, and a resort-style pool.




Hergt’s news comes as we exclusively revealed that chef Todd English, who recently opened Pappas Taverna in the West Village, Will also open a private restaurant Inside the Bentley Residences at Sunny Isles.
